Ingredients for the broccoli burgers

  • 17.6 oz broccoli
  • to taste fine salt
  • to taste ground black pepper
  • 2.8 oz grated Parmesan cheese
  • to taste rice flour (Or breadcrumbs)
  • to taste Breadcrumbs for dusting
  • 5.3 oz ricotta (Or mozzarella)

Steps for the egg-free broccoli burgers

  • To make these tasty broccoli burgers, first, clean the broccoli and boil them in salted hot water. Once they are cooked, drain them and let them cool. Mash the broccoli in a large bowl with the help of a fork and add salt, pepper, and grated Parmesan cheese, mixing thoroughly. Finally, add enough rice flour or breadcrumbs until you get a soft and workable dough, not too hard.

  • Spread a sheet of parchment paper, sprinkle with breadcrumbs, and form the burgers using a pastry cutter. Then, place the pastry cutter on the parchment paper, put a few spoonfuls of dough inside, and press well. Finally, place ricotta or mozzarella in the center and cover with more dough, level the surface and sprinkle with more breadcrumbs as needed. Continue this way until all the dough is used. Place the burgers in the fridge to firm up for 30 minutes. Then cook in a hot oven at 355°F-392°F for 20-25 minutes, or in an air fryer at 374°F for 15 minutes.
