Ingredients for the caramel sauce recipe
- 1 cup granulated sugar
- 1/2 cup heavy cream
- 5 tbsp butter
- 1 pinch fine salt (Optional)

Steps for the caramel sauce recipe
For the salted soft caramel, over medium heat, melt a small part of the sugar in a pot and gradually add the remaining sugar until you obtain a brown caramel (ideal temperature 320°F-338°F). Add the butter in pieces and stir vigorously with a wooden spoon. Meanwhile, in another pot, bring the cream to a boil. Slowly pour the hot cream over the caramel, being careful not to burn yourself, and stir with a wooden spoon, with the heat off. Let it cool at room temperature, stirring occasionally for a couple of hours. Once it’s completely cooled, pour into sterilized jars and put in the fridge. Or store in a cool, dry place. I prefer storing it in the fridge to prolong its shelf life.

STORAGE, TIPS AND NOTES
To make the whipped caramel, make sure to heat the cream until it starts to smoke and is almost boiling. But do not let it boil. Remember, do not stir the caramel at the beginning with a spoon; it’s better to swirl the saucepan. Only when it has become liquid can you gently stir it. To avoid a dark and bitter caramel, melt it over medium-low heat.
