Ingredients for preparing rice stuffed tomatoes

  • 5 round tomatoes
  • 1 1/4 cups rice
  • 1 tablespoon tomato paste

Steps for preparing rice stuffed tomatoes

  • Remove the tops of the tomatoes and scoop them out, collecting the pulp in a tall container. Salt the inside of the tomatoes and let them rest upside down to remove some of the excess moisture.

  • Boil the rice for half the time indicated on the package. Blend the tomato pulp with oil, salt, and tomato paste. You’ll get a cream to season the rice.

  • Add oregano and diced cheese to the seasoned rice. Fill the tomatoes with this mixture.

  • Place them in a baking dish, garnish with Parmesan and a drizzle of oil, and bake at 356°F, fan-forced, for about 30 minutes. Serve hot or warm.

Storage and Variations

Store the tomatoes in the fridge for a couple of days.
