In this recipe, I’ll show you how to combine two of my favorite things, which are Legumes and Burgers. I present to you Legume Burgers, perfect on their own or in a nice sandwich.
For a while, I’ve been trying more plant-based eating, and legume burgers are perfect for their texture and flavor. I’ll show you 3 very easy versions to make, without eggs and lactose products.

Ingredients for Legume Burgers
- 4 oz canned chickpeas (already cooked)
- 1 cup potatoes
- 1 tbsp breadcrumbs
- to taste rosemary
- to taste salt
- 1 tbsp extra virgin olive oil
- 4 oz canned lentils (or already cooked)
- 1/2 cup rice
- 3 oz carrots (already cleaned)
- to taste salt
- 1 tbsp extra virgin olive oil
- 4 oz borlotti beans (already cooked)
- 3.5 oz red beets, cooked, boiled
- 2/3 tbsp breadcrumbs
- to taste oregano
- 1 tbsp extra virgin olive oil

Procedure for Legume Burgers
The procedure is very simple because, apart from small preparations, everything goes in the mixer.
Boil the potatoes and cut them into pieces. Then add all the ingredients (except the oil) to the mixer and form the burgers with your hands. If the mixture is too sticky, add some more breadcrumbs.
Use the oil to grease a pan and cook the burgers on each side for a few minutes. Let them cool slightly to firm up.
Boil the carrots in water and salt and cook the rice separately.
Now add all the ingredients to the mixer, except the oil, (do not add more salt).

Tips and Storage
These burgers are perfect to prepare in advance, cook, and store in the freezer in airtight silicone bags, so you have burgers ready at any time.
They are perfect in a sandwich, accompanied by lettuce leaves, tomatoes, and mayonnaise (vegan if you prefer this type of diet)
