Ingredients for the Coffee Pound Cake
- 3 eggs (XL size)
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 2 1/2 tbsp water
- 2 tbsp extra virgin olive oil
- 2 coffee shots (espressos)
- 1 packet baking powder
- to taste extra virgin olive oil
- to taste all-purpose flour

Preparation of the Coffee Pound Cake
In a bowl, pour the eggs, sugar (reserving 1 tablespoon for the top), and oil and work with an electric mixer for 4 minutes (you will get a very frothy mixture).
Now add the water and coffee and work for 2 minutes with the electric mixer.
Pour the flour and baking powder into the bowl and mix with the electric mixer for 5/6 minutes until you get a dense but smooth and lump-free mixture.
Grease and flour a loaf pan (11 1/2 inches x 5 inches) well and pour the prepared mixture into it using a silicone spatula.
Lightly grease the silicone spatula and make a lengthwise cut in the center of the dough (this is to create the classic central cut that a pound cake has).
Preheat the oven to 428°F and once hot, sprinkle the reserved sugar on top and bake the pound cake for 40 minutes, towards the end of baking do the toothpick test because each oven is different!
At the end of baking, the coffee pound cake should be well golden, once cooked, remove it from the oven, let it cool, remove it from the mold, and enjoy!
Notes
You can serve the coffee pound cake plain or covered with coffee glaze.
You can add chopped nuts on top before baking.
You can add 50g of crushed dark chocolate to the dough.
