You will need approximately two apples, which will be peeled, diced, and blended in a mixer along with the lemon juice. Now let’s prepare the batter. In a large bowl, beat the eggs with the sugar for a few minutes, add the apple puree, gradually add the oil, the milk or yogurt, and mix again for a few minutes. Add the grated lemon zest and mix, finally add the sifted flour together with the salt and baking powder and mix well until you get a smooth and homogeneous batter.
