Steps for the potato pie with cured ham and melty mozzarella
To prepare this delicious potato pie with cured ham and melty mozzarella, you first need to boil the potatoes. Place a pot full of water on the stove and add the potatoes, boiling them for 45 minutes or until they are ready, which you will see when they fall apart under a fork. Pass the hot potatoes through the potato masher and place them in a bowl. Add the butter in pieces, salt, pepper, and nutmeg, and carefully mix with a fork or spoon. Add the grated parmesan, eggs, and mix again to obtain a smooth and homogeneous mixture.
Butter and flour single-use muffin molds. Place a spoonful of potato mixture in each mold and press it down well, trying to create a groove where you will lay a slice of cured ham and pieces of mozzarella that have been previously cut into cubes. Cover the filling with more potato mixture, press down well with your hands, and finally sprinkle the surface with more breadcrumbs. Bake in the oven at 392°F for 20-25 minutes or until golden. Turn off, remove from oven and let cool.
Carefully remove the pies from the oven, place them on a serving plate and serve.
