Ingredients for Greek Yogurt Flatbread
- 5.3 oz Greek yogurt
- 2 1/2 cups semolina (Or all-purpose flour)
- 1 1/2 tbsp extra virgin olive oil
- 1/4 cup room temperature water (Or milk)
- 1 tsp baking soda
- 1 pinch fine salt
- to taste Genoese pesto (Or extra virgin olive oil)

Steps for Greek Yogurt Flatbread
To make this Greek yogurt flatbread, first take the Greek Yogurt out of the fridge and let it sit at room temperature for 10 minutes. Mix all the ingredients in a bowl to achieve a smooth and uniform dough. You can use a food processor or knead everything by hand. Once the dough is ready, let it rest for 10 minutes. Then divide the dough into about 6 portions (of course, it also depends on the size you want) and create balls. Roll out each portion with a rolling pin to a thin thickness if you want to fill them or less thin and oval to get thicker bread.
Heat a non-stick pan and place the dough. The flame should be medium-low. It will be cooked when bubbles appear on the surface. As soon as the underside starts to color, you can gently flip it and cook the other side. The cooking time is about 2-3 minutes but varies depending on the size and thickness of the bread.
