  • Homemade béchamel
  • 2 zucchini
  • 1.1 lbs Frozen or fresh peeled shrimp
  • to taste fine salt
  • to taste black pepper
  • fresh chives
  • to taste extra virgin olive oil
  • to taste water

Steps for Crepes Bundles with Zucchini and Shrimp

  • The first thing to do to make these crepes bundles with zucchini and shrimp is to prepare the crepes and béchamel sauce in advance. Once that is done, wash the zucchini, cut off the two ends, and grate with a coarse grater. Cook the zucchini in a pan for about 10 minutes with a drizzle of oil, salt, and pepper and, if necessary, a splash of water. Turn off the heat and let cool. Meanwhile, cook the frozen shrimp in boiling salted water for 10 minutes, remove them with a slotted spoon, and let cool. If using fresh shrimp, just sauté them in a pan for a few minutes. Now that everything is ready, we can start assembling and stuffing the crepes. Place the crepes on a cutting board and fill them with a couple of tablespoons of béchamel, the zucchini, and finally the shrimp. Close into a bundle using fresh chives and place in a baking dish previously ‘smeared’ with a tablespoon of béchamel. Bake in a hot oven at 350°F for about ten minutes.
