  • 3/4 cup granulated sugar
  • 6 tbsps sunflower oil
  • 1 3/4 cups all-purpose flour

  • 1 pinch fine salt

  • 8.8 oz strawberries
  • as needed Nutella® (Optional)
  • 1 tsp vanilla essence
  • 2 apples

  • To make this delicious soft cake with strawberries, apples, and ricotta, preheat the oven to 350°F. In a bowl, use electric whisks to mix the eggs with sugar, vanilla, and grated lemon zest until you get a pale mixture. Then add the ricotta and oil, continuing to whisk for a few minutes. Finally, add the sifted flour and salt, mixing carefully. Lastly, add the packet of baking powder, always sifted, and mix vigorously until you achieve a homogeneous dough. Peel the apples and cut them into cubes. Wash the strawberries and also cut them into cubes. Add the fruit to the dough and mix until you get a smooth and homogeneous mixture. Butter and flour a 9.5-inch round pan, pour the mixture in and optionally add some spoonfuls of Nutella on the surface. Bake in a preheated static oven at 350°F for about 40-45 minutes. If the surface darkens after 30 minutes, cover with a sheet of aluminum foil or baking paper. Do the toothpick test, then turn off, remove from oven, and let cool.
