Preparation of pork loin with apples and peppers

  • Let’s focus on the meat, which we will pat dry with kitchen paper, then coat in flour. In a saucepan, brown the finely chopped onion with 5 sage leaves in 3 tablespoons of butter and a drizzle of oil. Add the pork loin, browning it well on each side until it has a golden appearance, deglaze with brandy and let it evaporate. Take the apple and slice it to about half an inch thickness, divide the slice in half, or leave it whole, depending on the thickness of the meat available.

  • Now for the most important moment. Remove the meat from the saucepan, place it on a cutting board, and wait a few minutes for it to cool slightly. Then make transverse cuts almost to the bottom of the meat, about 3/4 inch apart. Place the apple slices in each cut, then put the pork loin back in the pan. Moisten with broth, reduce the flame, cover and cook for about 2 hours on low heat, adding broth if the cooking liquid reduces too much.

  • In the meantime, take the peppercorns and crush them coarsely with a meat tenderizer. After about an hour and a half of cooking, spread the crushed peppers over the top, season with salt, and let everything cook to absorb the flavors for the last 30 minutes. Then add the cream or milk and let the sauce reduce for about 10 minutes, until a truly inviting sauce forms. Let it rest for a few minutes, slice, and serve
