- 4 slices pork loin
- 1 lemon

- 1 knob butter
- as needed extra virgin olive oil

Steps
To prepare the lemon pork scallops, start by dredging the meat in flour. I used semolina, but all-purpose flour or type ‘0’ flour is also fine. Then put a knob of butter and a splash of EVO oil in a pan. Place the pan over medium-high heat, and once the butter has melted, brown the slices on both sides. It will take just a couple of minutes.
Now lower the heat and pour in the strained lemon juice. Add a pinch of salt, cover with a lid, and cook on low heat for about 4 minutes. If necessary, add a few tablespoons of water to prevent them from drying out too much.
Turn off the heat and season with chopped parsley and grated lemon zest, and serve hot.
