- 4 slices chicken breast
- 2 slices cooked ham
- 1 slice provolone cheese
- 3.5 oz pistachio pesto
- 3.5 oz breadcrumbs
- 2 tbsps grated Grana Padano

To prepare these delicious chicken rolls with pistachio, start with the meat preparation. Take four slices of chicken breast; they should be about 5-6 inches long. If they are thick, flatten them with the meat tenderizer. Lightly salt them, then place half a slice of ham on each chicken breast slice. Add a strip of provolone cheese, and finally, a teaspoon of pistachio pesto. Set aside half a teaspoon of pesto. Roll the stuffed part inward and, if necessary, secure the roll with a toothpick. Prepare the breading mix by combining breadcrumbs, grated Grana Padano, and half a teaspoon of pistachio pesto in a bowl. Now brush the roll with vegetable oil, then pass it in the breadcrumb mix. Once well breaded, place the rolls in a lightly greased non-stick pan or cover the bottom with parchment paper.
Bake at 375°F for 15 minutes, in a preheated oven, with both the lower and upper parts turned on.
