Lemon Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup milk
  • 1 egg
  • 3 tbsp vegetable oil
  • 1 lemon (1/2 juice + 1 grated zest)
  • 1/2 packet baking powder

Steps

  • To prepare the lemon muffins, start by pouring an egg along with the sugar, the juice of half a lemon, and the grated zest of one lemon into a bowl. Mix with the beaters, then add the milk and the oil.

    Next, add the sifted flour and work with the beaters until everything is combined. Finally, add the baking powder. Work the batter with the beaters until you get a smooth and even mixture.

    Take a muffin tray and line it with paper liners, or use silicone liners placed directly on a baking sheet. Pour the lemon mixture inside, filling 3/4 of the space available in the liners.

    Bake in a preheated oven at 350°F for 20-25 minutes.
