Whole Grain Cookies with Oats

I must say: I’m a bit possessive about this recipe. I created it during the lockdown, experimenting for the first time in my life with the use of whole grain flour in desserts. Unlike other recipes, when I shared this one on Instagram, it became an instant hit: everyone wanted to try it, and I started doing a long selection, only sharing it with three trusted people. Today I’ve decided it’s time to share it with everyone. So all that’s left is to suggest you try these delicious whole grain cookies with oats, rich in fiber.

Ingredients

  • 2/3 cup whole grain flour
  • 1 cup rolled oats
  • 2 tbsp sugar
  • 1 egg
  • 2 tbsp sunflower oil
  • 3 tbsp dark chocolate chips
  • 1/2 tsp baking ammonia

Preparation

  • To prepare the whole grain cookies with oats, start by putting the sugar and the egg in a bowl and mix well. Add the oil and continue to mix with a fork. If you have a stand mixer, use it on low speed with a paddle attachment.
    Add the flour gradually and knead with one hand. When the flour has absorbed the liquids, add the baking ammonia and rolled oats. Initially, it will seem difficult to integrate them into the dough, but keep working it until they are fully combined. Add the chocolate chips and mix until well incorporated throughout the mixture.
    Form a log with the dough and cut it into slices about 0.4 inches thick. Place the cookies on a baking sheet lined with parchment paper, leaving 0.8 inches between each cookie, and bake in a static oven at 340°F for 15-20 minutes.

Advice

For an even healthier version, you can replace sugar with honey
