Snowy Pavesini with Nutella and Mascarpone

The Pavesini with Nutella and mascarpone are soft like clouds, with a creamy and irresistible heart that conquers at the first bite. They are one of my favorite quick desserts, as good as they are dangerous… because once tasted, it is truly impossible to stop!
I rarely prepare them for this very reason: I can’t resist, they disappear in an instant.
I know it’s a recipe already seen and known by many, but I believe that sometimes it’s nice to rediscover the great classics, especially when they are so simple to make and so delicious to eat. This version is perfect for when you want a homemade dessert but have little time available. No baking, with few ingredients and ready in minutes: ideal for an end of meal, a special snack, or a dessert buffet.
What can I say? If you love desserts with mascarpone and Nutella, I recommend trying them… but I warn you: one leads to another!

  • 8.8 oz mascarpone
  • 3 tbsps Nutella®
  • 0.85 cup milk
  • 1 coffee cup coffee
  • to taste shredded coconut

Pavesini Preparation

  • To prepare our Snowy Pavesini, let’s start with the coffee: prepare a small cup, sweeten it slightly to your taste, and let it cool completely.
    In the meantime, in a large bowl, pour the mascarpone together with the 3 tablespoons of Nutella. With an electric mixer (or by hand, if you prefer), work the mixture until you get a smooth, soft cream of a coffee-with-milk color.
    Now take the Pavesini and spread about a teaspoon of cream on the flat side of one cookie. Close with a second Pavesino, always on the flat side, pressing gently to make them adhere. Continue in this way until all the cream is used up. Set the filled cookies aside.
    In a small bowl, mix the milk with the now cold coffee. In another small plate, pour the shredded coconut.
    Now quickly pass each pair of Pavesini through the milk and coffee mixture, just long enough to slightly moisten them, and then roll them in the coconut, making sure the coating adheres well.
    Arrange the treats on a serving plate… and here are your Pavesini with Nutella and mascarpone: creamy, delicious, and very quick to prepare!

Suggestions

These coconut treats with mascarpone and Nutella can be enjoyed right away, as soon as they are prepared, or stored in the refrigerator, covered, for up to 1 day.

Alternatively, they can also be frozen: just put them in an airtight container and store them in the freezer for a couple of days. In this case, remember to take them out about 30 minutes before serving, so they can soften up and not be too cold to bite into.
