Coconut cookies are perfect for any time of day: whether it’s for an energizing breakfast, a tasty snack, or a quick bite, they’re always a great choice with their flavor and simplicity. Irresistible for coconut lovers, they are also ideal for pairing with a cup of coffee. Personally, they are one of my favorite cookies, along with whole grain oats, which I often bake.

Ingredients for Coconut Cookies
- 3/4 cup all-purpose flour
- 3 1/2 tbsp butter
- 1 cup shredded coconut
- 3 tbsp sugar
- 1 egg
- 1 tsp baking ammonia
Preparation of Coconut Cookies
To prepare these delicious coconut cookies, start by taking a bowl and working the softened butter together with the all-purpose flour. Next, add the baking ammonia and sugar, followed by the egg. Knead with your hands until you obtain a homogeneous dough, then incorporate the grated coconut. Continue to work the dough until it is well compacted.
Wrap the dough with plastic wrap and let it rest in the refrigerator for about 10 minutes. If you prefer, you can also prepare it the day before and let it rest longer.
After the resting time, remove the wrap and form a uniform log about 1.5 inches in diameter. Cut discs slightly more than 1/4 inch thick. Place them on a baking sheet lined with parchment paper to prevent them from sticking during baking, leaving a little space between each cookie.
Bake in a preheated oven at 350°F for 10-12 minutes, until the cookies are slightly golden.
Once out of the oven, let them cool before consuming them, to enjoy their crunchy texture at best!
Tips
You can also decorate them with melted chocolate, a truly perfect combination that will make them even more delicious!
If you store them in a glass jar or a tin, they will stay fresh and crunchy for up to 10 days.
