This personal creme caramel is a reinterpretation of the recipe my mother makes, who as a good azdora from Romagna, boils the whole milk for a long time until its quantity is halved, beats by hand the eggs from the free-ranging chicken etc etc… I tried to reduce the time due to the stresses of modern life (do you remember Ernesto Calindri at the table in the middle of the traffic?
I think you might be too young, huh huh) and everything is resolved in a maximum of 10 minutes of preparation!
This recipe which we in the family also call burnt milk, is just faster but the vanilla flavor remains perfect with every spoonful…

FOR THE PREPARATION OF THE CREME CARAMEL DESSERT RECIPE
For the spoon dessert creme caramel, in a saucepan I bring to a boil over low heat, the milk flavored to taste with the vanilla pod or with the zest of untreated lemon.
At the same time, in a bowl, I beat the eggs, yolks, and sugar with an electric whisk until everything is frothy.
I prepare a caramel with two or three tablespoons of sugar with a little water: I am used to doing it directly in the fluted pudding mold that I reserve for the creme caramel dessert and as soon as I get an amber color, I turn off the heat.
I add the hot milk strained to the egg and sugar mixture for the creme caramel dessert and put it to cook in a bain-marie in the oven at 356°F for about 30 / 40 minutes or depending on the characteristics of your oven.
Once creme caramel is cooked, let it cool completely and gently unmold it onto the serving dish, being careful not to lose the caramel that has formed during cooking and which would be a shame to lose….
