Steps for sweet focaccia with apples

  • In the mixer bowl, place the flour, yeast, water, eggs, and cinnamon. Mix for 10 minutes. Then add sugar and salt, and mix for another 5 minutes until you have a homogeneous mixture. Afterward, add the butter in small pieces gradually and mix for another 10 minutes. Let it rise at room temperature for about 30 minutes. Then transfer the dough to another bowl, cover with a cloth, and leave it in the fridge for 12 hours

  • After the rising time, pour the mixture onto a work surface and roll it out with a rolling pin, forming a circle about 11 inches in diameter, just right for a cake pan. Move the dough into the pan lined with parchment paper, and on the surface of the focaccia, place the apples, previously sliced and soaked in lemon water, creating a checkerboard pattern. Let it rise in the pan, at room temperature, until doubled. Before baking, sprinkle with brown sugar and some butter dollops, and bake at 356°F for about 20 minutes
