Steps for the preparation of zucchini salad with feta and walnuts
First, wash and trim the zucchini. Then slice them. I prefer them a bit thicker for more substantial slices. Grill them for a few minutes on each side on a grill pan. They should remain slightly crunchy. Lightly salt them.
Arrange the zucchini on a plate. Enrich with chunks of feta and roughly chopped walnut kernels.
In a small bowl, mix the chopped basil, extra virgin olive oil, grated lemon zest, vinegar, salt, and pepper. Dress the salad and serve.

You can store it in the fridge for one day.
