Ingredients
- 18.3 oz fennels (equal to 2 after trimming)
- 3.5 oz cherry tomatoes
- 1 cup breadcrumbs
- 1 oz grated Parmesan cheese
- black olives (pitted)
- 1 tbsp pickled capers
- 4 tbsp extra virgin olive oil
- 1 pinch fine salt
- chopped parsley
Steps
Clean the fennel by removing the tough outer parts. Preheat the oven to 375°F
Thinly slice the fennel and rinse them quickly.
Wash the cherry tomatoes, optionally remove the stems, and then cut them first into halves, then into quarters.
Combine the fennel and cherry tomatoes in a bowl.
Add the pitted olives.
Add the pickled capers.
Chop a sprig of fresh parsley and add it to the bowl with the other ingredients.
Finally, add the breadcrumbs and a pinch of salt.
At this point, add the olive oil and mix.
Line a baking tray with parchment paper and spread the ingredients evenly. Add the grated Parmesan cheese.
Bake in the hot oven for about 15 minutes or longer if needed. Serve hot or warm.
Tips:
If you like, you can also add onion rings and substitute parsley with dried oregano.
