Here’s everything you need to prepare a perfect focaccia!
- 5 1/4 cups all-purpose flour
- 1 tbsp active dry yeast
- 2 tsp brown sugar (or white)
- 1 1/3 cups water (slightly warm)
- 2 tsp salt
- 2 tbsp extra virgin olive oil
- 1/4 cup extra virgin olive oil (2 tbsp per baking pan)
- 3/4 cup water (1/2 cup per baking pan)
- 2 tsp salt (1 tsp per baking pan)

Steps
Follow me step by step in the preparation, and you’ll see that making focaccia at home is easier than you might imagine!
Pour the flour, brown sugar, yeast, and water into a bowl or a stand mixer.
Next, add the salt and extra virgin olive oil.
Continue kneading the dough until it becomes smooth and homogeneous.
Divide the dough into two 500 g pieces, flatten them slightly, cover with plastic wrap, and let them rest for 30 minutes at room temperature.
Roll out the dough pieces on two baking trays previously greased with extra virgin olive oil, place them on the tray until covering 70-80% of the surface, then cover again with a cloth and let rest for another 20-30 minutes.
At this point, press firmly with your fingers towards the edge of the tray until covering the entire surface, creating a tiny edge (it’s important that it remains attached to prevent the brine from seeping underneath), and cover for another 30 minutes.
Uncover the focaccia, lightly dust the surface with flour and start making indentations with your fingertips.
Once the indentations are made, pour 2 tbsp of extra virgin olive oil in the center of the focaccia. Next, pour about 1/3 cup of the previously prepared brine over the oil and lightly mix with your hand to cover all the holes.
Now preheat the oven to 428°F and bake the focaccia for about 12-15 minutes, until the surface turns golden.
A fragrant and tasty focaccia, perfect to enjoy on its own or accompanied by ham, cheese, or other ingredients of your choice.
