Ingredients for roasted pumpkin with skin

  • 1.6 lbs delica pumpkin (or classic pumpkin)
  • 6 cloves red garlic (to leave with the skin)
  • 1 teaspoon rosemary (fresh or dried)
  • 1 pinch fine salt
  • 2 tablespoons extra virgin olive oil

Preparation (super easy!) of roasted pumpkin with skin.

  • Remove the central waste parts from the pumpkin using a spoon, then cut it into slices at least 0.8 inches thick and place them on the oven tray covered with parchment paper.

  • Lightly salt the pumpkin slices (but just a pinch of salt is enough!), sprinkle with rosemary (fresh or dried).

  • Add the garlic cloves on top of the pumpkin and on the tray (WITHOUT PEELING THEM), pour the oil on top, preheat the oven to 428°F and bake, cook for 25/30 minutes.

  • Once cooked, take the pumpkin with skin out of the oven and enjoy it in all its goodness! Great both hot and cold!

ADVICE

Roasted pumpkin with skin is perfect as a side dish but also perfect as part of a dinner aperitif.

You can serve it for the aperitif perhaps paired with some roasted chestnuts in the air fryer!
