Ingredients
- 1.1 lbs pork loin (loin)
- 2 cups milk
- 5 tbsps extra virgin olive oil
- 1 oz butter
- 1 onion (small)
- 1 clove fresh garlic
- 1 bunch parsley
- 1 carrot
- 1 leaf bay
- 1 salt
- 1 pinch pepper

Steps
Cut the garlic clove into three pieces and lard the meat, meaning make incisions with a sharp pointed knife and insert them deep so they don’t come out during cooking.
Rub the meat with salt and pepper and brown it in the pot with oil and butter. Use the Sauté function in More mode and brown it on all sides.
Meanwhile, chop the onion, carrot, and parsley and then add them to the pot with the meat. Let them cook for just a few minutes, until the vegetables are softened. Be careful not to burn them!
Now cancel the Sauté program and add the milk. Close the Instant Pot lid, close the valve, set it to sealing, and set the cooking. Use the Pressure Cook button in High Pressure, Normal mode for 45 minutes.
Once cooking is complete, release the valve by setting it to Venting and open the lid when the Instant Pot has released all the steam.
At this point, the meat will be done, but you’ll need to thicken the sauce a bit because the electric pressure cooker doesn’t release steam during cooking. Use the Sauté function in medium mode and let it simmer for a few minutes until it reaches a nice creamy consistency.
Serve the pork loin in milk sliced, covered with its tasty sauce.
My Advice
You can store the sliced pork loin covered in its sauce in the refrigerator inside a well-sealed container for two or three days.
I recommend serving it with mashed potatoes or a nice portion of steaming polenta.
