Ingredients for the pumpkin burgers

  • 12 oz pumpkin (already boiled)
  • 1/4 cup oats
  • 1/2 cup breadcrumbs
  • 1.4 oz nutritional yeast (or parmesan)
  • to taste salt
  • to taste pepper
  • to taste paprika

  • 1 Bowl bowl
  • 1 Pan pan

Procedure for the pumpkin burgers

  • Mix all the ingredients in a bowl with a spoon and then knead the mixture with your hands to form a dough that is not too sticky.

    If the mixture is too loose, add a little more breadcrumbs.

    We can use a pastry cutter and a spoon to shape the burgers.

    Coat them in breadcrumbs. Grease the pan with a drizzle of extra virgin olive oil and cook the burgers for a few minutes on each side.

    Serve them in a bun with lettuce or on their own with a tomato sauce.

Tips and Notes

For this recipe, I recommend cooking the pumpkin in the oven, this way it will retain less water and it will be easier to knead the burgers.

These burgers are perfect for preparing in advance. We can freeze them already cooked and reheat them in the oven when needed.
