Vegetables alla schiscionera or stewed vegetables is a typical Sardinian recipe.
In the dialect term ‘Alla schiscionera’ we mean ‘sautéed’. In fact, ‘sa schiscionera’ was the name of the pan in which the dishes were prepared and then sautéed. The main flavors of the schiscionera recipes are minced garlic and parsley, but other spices can also be added to make the dishes tastier. The most famous are the potatoes alla schiscionera, delicious.

- 1 zucchini
- 1 eggplant
- 1 bell pepper
- to taste minced garlic and parsley
- Half minced onion
- 2 leaves bay leaf
- 2 ripe tomatoes

Steps
Wash the vegetables, remove the waste and cut them into chunks.
In a tall saucepan, add oil, minced garlic and parsley, minced onion, bay leaf, vegetables, and diced tomato.
Give it a good stir, adjust the salt, and bring it to the heat. Cover with a lid and cook for about 20 minutes. Serve with toasted bread. They are good both hot and cold.
