The “harlequin” pepper quiche, as the name suggests, is a colorful savory tart to enjoy cold, paired with a good glass of white wine or an icy beer. It’s very easy to make, perfect for buffets, as an appetizer, for evenings with friends, or when you want to dine on something tasty. It can also be prepared the day before and kept in the fridge, well covered, until ready to serve. Make it for a picnic and it will be a real success. Turmeric and pepper, in addition to adding that extra touch of flavor and color, pair beautifully with the aroma and taste of the peppers.

- 3 medium whole eggs
- Half cup milk

Steps
1) Wash the peppers, cut them in half, remove seeds and white ribs, then slice into strips about one inch wide.
2) Preheat the oven to 428°F.
3) Place the puff pastry in the tart pan already lined with parchment paper. In a bowl, lightly beat the eggs with salt, pepper, turmeric, cheese, and milk.
4) Line the inside of the puff pastry with the pepper slices, alternating colors until you reach the center. Pour the egg mixture over the peppers and tap the bottom of the pan lightly to distribute it evenly.
5) Bake the quiche in the middle of the oven for about 25 minutes or until the puff pastry is golden and puffed. After baking, immediately remove the delicious and colorful harlequin pepper quiche from the oven and do not touch it until it is warm, to prevent the puff pastry shell from breaking.
