Purple Sweet Potato Mash
- 28 oz sweet potatoes (purple or orange)
- 1 tbsp extra virgin olive oil (or vegan butter)
- 1/2 cup milk (unsweetened plant-based)
- to taste fine salt (and a powdered seasoning: turmeric, curry, nutmeg, oregano, long pepper, chili pepper, rosemary, thyme)

Purple Sweet Potato Mash
Wash the potatoes well (to remove all the dirt), do not peel, and cut into regular pieces.
Cook the sweet potatoes for 10 minutes (from the whistle) in a pressure cooker or 30 minutes in a pan with boiling water.
Once cooked and nice and tender, mash them while still hot and with their skins, with the potato ricer (the skin will remain on the top and can be easily removed before mashing other potatoes) or the food mill. Or mash them with a fork, in this case, it’s better to cook the peeled potatoes cut into small pieces.
Pour the puree into a bowl, add the oil (or butter), salt, hot milk, and mix. Add your favorite spice.
– for a smoother texture pass the potatoes through the ricer twice
– for a more fluid mash add more hot milk.
PURPLE MASH – vegan variations
– cook the peeled potatoes cut into small pieces directly in plant-based milk
– sprinkle with chopped nuts or seeds
What to pair with?
– with legumes: borlotti beans, lentils, cannellini beans
– with sautéed mushrooms
Vegetarian alternatives
– for a richer taste, add grated or cubed cheese (without animal rennet), cream.
STORAGE of the mash
The mash can be stored for up to 2 days in the refrigerator, in a closed container.
Before consuming, heat it up by adding some hot milk.
What to do with leftover mash?
Gateau: add eggs to the cold mash, and in a baking dish, alternate the mixture with mozzarella (or for omnivores: cold cuts and salami), cover with a layer of Parmesan, and bake in a hot oven at 356 °F for 15 minutes.
