Ciccio fit light pancake with orange
I discovered these thick and fluffy protein pancakes like a cake on Instagram; looking at the photos made me crave them like crazy. Then I found out they are also protein and light, so I had to try them, and they are really delicious and light, and can be prepared in a thousand different and tasty variations, even accompanied by maple syrup or light creams.

Ideal for a healthy, protein, and light breakfast, gluten and lactose-free.

Ingredients for Ciccio fit light pancakes

  • 3 oz oat flour
  • 4 oz egg whites
  • 2.7 fl oz orange juice
  • 0.1 fl oz seed oil (or coconut oil)
  • 1 tsp baking soda
  • 1 fl oz lemon juice
  • to taste maple syrup (optional)
  • unsweetened cocoa powder (optional)

  • High-sided saucepan nonstick 5.5 inches diameter

Preparation of Ciccio fit light pancakes

  • Squeeze the orange juice with the juicer.

  • Pour 3.5 fl oz of egg whites into a bowl and add the 2.7 fl oz of orange juice and mix well with a hand whisk – without whipping – until obtaining a smooth and homogeneous batter.

  • Finally, add 1 tsp of baking soda to the mixture and squeeze 1-1.2 fl oz of (strained) lemon juice over it. Let the mixture sit for about 20 seconds, then mix well, making the foam disappear completely.

  • It’s important to make the foam disappear completely, otherwise the taste will be bitter in some spots.

  • Heat a nonstick saucepan with a 5.5-inch diameter (important diameter!) and high sides (see Buying Tips at the bottom of the article), then pour the batter, lower the heat to minimum, and cover with a lid. The high sides help the pancake rise and become tall. It’s not necessary to grease the saucepan with oil or butter.

  • When the surface is set and almost fully cooked, flip the pancake and let it cook for a few more seconds, still with the lid on. Use a soft silicone spatula to assist in flipping.

  • Once ready, remove the pancake from the heat and let it cool on a rack.

  • If desired, serve the pancake with maple syrup, or add a sprinkle of unsweetened cocoa powder, with grated orange zest, for garnish.

Notes and Tips

It’s not necessary to add sugar to the batter due to the presence of orange that provides sweetness, but if desired you can add a tablespoon of brown sugar and also 0.7 oz of dark chocolate chips.

You can also vary the type of flour, creating these following mixes: oat, barley, coconut, rice – oat, whole wheat, rice, coconut – oat, amaranth, coconut, whole wheat.

The lid is essential for a good pancake result and it’s important to keep the flame at minimum until the surface is fully set (1-2 minutes per side). Be careful not to surpass the cooking time, otherwise, the pancake will be harder.

The pancakes last 3 to 4 days if stored in the fridge wrapped in cling film and can also be frozen.
