Light zucchini and onion velouté
A light and creamy velouté, even without potatoes, is not easy to find; it warms you up in winter, but is good cold in summer as well. Only 2 ingredients.
This easy and quick velouté, gluten-free, light, and bloating-relieving, a true boon for our body: zucchini and onions have a very low-calorie content, making them particularly suitable for low-calorie diets. They are low in salt, diuretic, and help to counteract urinary tract problems. Onion, in particular, is famous for its strong antibacterial, antibiotic, and disinfectant action.

Ingredients for Light zucchini and onion velouté
- 1.3 lbs zucchini
- 3 copper onion (large)
- to taste basil
- 1 tbsp extra virgin olive oil (added raw)
- to taste Parmigiano Reggiano DOP (optional)
- to taste fresh ginger (or powdered, optional)
Tools
- Bowls of various sizes
- Cutting board with two side trays incorporated for scraps
- Immersion blender Braun 1000 W power
Preparation of Light zucchini and onion velouté
Cut the zucchini and onions into pieces.
Place them in a pot and cook covered with cold water over low heat for about 35 minutes from the boil.
Once the zucchini and onions are cooked, blend them several times with the immersion blender (if you like, you can also add a pinch of fresh or powdered ginger).
Add raw extra virgin olive oil and basil.
If you like, you can also add grated Parmesan cheese and accompany it with croutons. In the summer, it’s also good cold.

For cutting the vegetables, I used this very handy cutting board with two side trays incorporated: one to collect cut food, the other to collect scraps.
For blending zucchini and onions to get a smooth cream, I used my very handy Braun MultiQuick 7 immersion blender.
