Super Soft Christmas Star

Super Soft Christmas Star is a simple, scenic dessert. The cake is tall and soft, it melts in your mouth, and it’s perfect for the Holiday Table. It doesn’t require leavening, which is why it can be prepared in just a few minutes. It can be served as a Christmas or New Year’s dessert and accompanied with mascarpone cream with pasteurized eggs. I prepared it with classic ingredients: flour, eggs, milk, and sugar, enriched inside with chocolate chips, but they can be replaced with cherries or candied orange peel if desired. Ingredients

  • 3 eggs
  • 1/2 cup sugar
  • to taste vanilla essence
  • 1/3 cup milk
  • 1/3 cup vegetable oil
  • 2 1/2 cups all-purpose flour
  • 1 packet baking powder
  • 1/2 cup candied orange peel
  • 3 egg whites
  • 1/3 cup cornstarch
  • 1/4 cup sugar
  • 1 oz sugar sprinkles
  • 1/2 cup almonds (+ for decoration)
  • to taste sliced almonds (for decoration)

How to Make the Super Soft Christmas Star

  • In a large bowl, beat the eggs with the sugar and vanilla essence, then pour in the milk and next the oil in a thin stream, after which incorporate the sifted flour and baking powder and mix well.

  • Finally, add the candied orange peel and mix gently. Pour the mixture into a star-shaped paper or aluminum mold.

  • In a mixer, finely chop the almonds (leave some for the final decoration), then add the cornstarch, sugar, and egg white, blending everything well. Pour the glaze over the cake and finally decorate with both whole and sliced almonds along with the sugar sprinkles.

  • Bake in a preheated static oven at 350°F for about 30 minutes. In the last 10 minutes, I covered the surface with a sheet of aluminum foil.

Preserving the Super Soft Christmas Star

The Super Soft Christmas Star keeps well for several days under a cake cover. It can be frozen. If preferred, candied orange peel can be replaced with raisins or chocolate chips.
