Super Soft Apple Bundt Cake
This super soft apple bundt cake, passed down from my maternal grandmother, is very easy to prepare quickly and the success is guaranteed, it has such a soft and moist crumb that melts in your mouth, also ideal for children, great for a healthy breakfast, disappears in no time!

Ingredients
- 4 cups All-purpose flour (Caputo Pastry Flour)
- 2 Eggs (whole)
- 1.25 cups Sugar (+0.5 cup to season the apples)
- 1 stick Butter
- 1.25 cups Whole milk
- 2.2 lbs Golden apples (or russet, for the batter)
- 2 Golden apples (for the surface)
- 2 tbsp Cognac (or Rum)
- 1 packet Baking powder
- 2 tsp Ground cinnamon
- 2 tsp Vanilla extract (or 2 packets of vanillin)
- 0.5 tsp Salt
- as needed Fresh liquid cream (optional)
- as needed Sugar grains (for the surface, optional)
- 1 Egg white (for the surface, optional)

- Mixer electric 500W power, 5 speeds + Turbo

Preparation
Slice 2.2 lbs of apples into slices and another 2 apples into cubes (to be placed later on the surface).
Season all the apples (both sliced and cubed) with 0.5 cup of sugar and a packet of cinnamon.
Then whip for at least 8 minutes the sugar (1.25 cups) with the two whole eggs and the salt until bubbles form on the surface.
Next, add the butter (previously melted in a bain-marie) and, alternately, the flour (sifted with the baking powder) and the milk, the vanilla extract, the packet of cinnamon and the cognac, and finally add the sliced apples.
Place all the apple cake batter into a buttered and floured mold with a diameter of 10 inches (with sides 4 inches high), the mold can be as you prefer, either round or bundt.
Sprinkle the surface with the apple cubes (already seasoned with sugar and cinnamon) with a little more sugar.
Bake the apple cake in a preheated oven at 320°F (not more), for about 60 minutes.
Once out of the oven, sprinkle with vanilla sugar.
You can accompany the apple cake with lightly whipped fresh cream or with this Zabaglione cream by Laura Ravaioli HERE.
If you want, instead of the apple cubes, you can simply brush the batter on the surface with an egg white and sprinkle it with granular sugar.
