Ingredients

  • 1 sheet puff pastry
  • 1.1 lbs potatoes
  • 2.8 oz smoked salmon
  • 3.5 oz stracchino cheese
  • to taste salt
  • to taste egg (for brushing)
  • to taste sesame seeds
  • 1 drizzle extra virgin olive oil

How to make Potato and Salmon Puff Pastry

  • Peel the potatoes, then cut them into medium-small cubes that are fairly uniform (to ensure even cooking).

  • Blanch them in salted water for 5-6 minutes, then drain them into a bowl and set aside. Roll out the puff pastry on a baking tray covered with parchment paper, and prick it with a fork.

  • Add the potatoes, season with salt and pepper, and then add the smoked or fresh salmon (according to your preference), and also add the stracchino cheese.

  • Fold the edges, brush them with egg, and decorate with seeds. Bake in a preheated oven at 375°F for about 30 minutes on the lower rack until golden brown. Garnish with chopped parsley and a sprinkle of pepper if you like.
