Air Fryer Turnip Green Meatballs

Ingredients

  • 1.54 lbs turnip greens
  • to taste breadcrumbs
  • 0.88 oz grated Parmesan cheese
  • 1 egg
  • to taste salt
  • to taste extra virgin olive oil
  • 3.53 oz provola cheese
  • 1 clove garlic
  • 2.71 tbsp water

Steps

To prepare the air fryer turnip green meatballs, start by cleaning the turnip greens, removing the spoiled leaves and the toughest part of the stem. Wash everything thoroughly under plenty of running water.

In a pan, add a couple of tablespoons of oil, the garlic clove, and let it brown for a few minutes over low heat. Remove the garlic from the pan, add the turnip greens, water, and salt to taste. Cook for 8-10 minutes until the turnip green stems are tender.

Once the turnip greens are cooked, pour them into the bowl of the immersion blender and blend until you get a puree. In a bowl, pour the puree, add the grated Parmesan cheese, 4-5 tablespoons of breadcrumbs, the egg, and mix everything with a spatula until you get a homogeneous mixture. If the mixture is too soft, add more breadcrumbs.

Take some of the mixture and form meatballs, placing a cube of provola in the center and closing them well. In a bowl, put some breadcrumbs and roll the meatballs in it to coat.

Place the meatballs in the air fryer basket, spray them with a bit of extra virgin olive oil, and cook at 356°F (180°C) for 16-18 minutes, turning them halfway through cooking.
