Chestnut Cream Amaretti

Ingredients for the Chestnut Cream Amaretti
- 2 cups Almond flour (gluten-free)
- 1/3 cup oz Chestnut cream (thick)
- 2 egg whites Egg Whites (about 2 egg whites)
- 1 cup oz Powdered sugar
- 1 tbsp Vanilla extract (optional)
- as needed Rum (or other liqueur, to form cookies, optional)

- Mixer electric 500 w power, 5 speeds + Turbo
- Bowl
- Parchment paper
- Mat micro-perforated silpat
- Baking sheet micro-perforated
Preparation for the Chestnut Cream Amaretti
Take a bowl and mix the almond flour and powdered sugar (preferably sifted).
Add the 2 egg whites and the chestnut cream to the dry ingredients in the bowl, mix well by hand or with an electric mixer.
Place the mixture in the fridge to rest for one hour.
Preheat the oven to 350°F.
Moisten your hands with the chosen liqueur (or even just water) to form the cookies more easily (I used Rum).
Form the cookies by shaping them into walnut-sized balls, flatten them slightly in the center, and roll them in powdered sugar.
Place the cookies on a baking sheet (preferably micro-perforated) lined with parchment paper.
Bake the cookies for about 15 minutes, but start checking at 13 minutes, because they shouldn’t overcook, or they will harden when cooled.
Let the amaretti cool well before consuming.
