Fresh Cheese with Salmon

Fresh Cheese with Salmon is a delicate and super tasty appetizer that combines the creaminess of cheese with the savoriness of salmon. Ingredients

  • 2.8 oz smoked salmon (Re Salmone)
  • 6.7 oz cow's fresh cheese
  • 2 tbsps extra virgin olive oil
  • to taste pink peppercorns
  • to taste lemon juice

Steps

  • Lay the slices of salmon on the serving dish, slightly overlapping them.

    In a separate bowl, mix the oil and lemon juice, and drizzle this emulsion over the salmon. Cover with plastic wrap and let rest in the refrigerator for 1 hour.

    Cut the cheese into wedges, then fill it with the marinated salmon and garnish with a few peppercorns.

Storage and variations for Fresh Cheese with Salmon

You can store it in the refrigerator in an airtight container until the next day. If you don’t like peppercorns, you can replace them with chopped pistachios. For a touch of freshness, if you like, you can add a couple of mint leaves to the marinade.
