Ingredients for Baked Meatballs with Potatoes
- 1.5 lbs ground beef
- 1 egg
- 1/2 cup grated Parmesan cheese
- 2 tsp salt
- as needed milk
- 2 oz stale bread
- 14 oz potatoes
- 2 sprigs rosemary
- as needed extra virgin olive oil
- as needed breadcrumbs
How to Make Baked Meatballs with Potatoes
In a large bowl, place the ground meat, the egg, the salt, the grated Parmesan, and the bread previously soaked in milk.
Mix well with your hands until all the ingredients are combined, then form the meatballs with your hands and set aside.
Wash and slice the potatoes not too thick, blanch them for 6 minutes in salted boiling water. Then season them with salt, pepper, garlic powder, and rosemary.
At this point, oil a baking dish and sprinkle it with breadcrumbs, then alternate a slice of potato with a meatball.
Season with a sprinkle of breadcrumbs and a drizzle of oil. Bake at 390°F for about 35 minutes.
When done, take out of the oven, let cool slightly, and serve in portions. Enjoy your meal!
Storage and Tips on Baked Meatballs with Potatoes
Baked Meatballs with Potatoes can be stored in the refrigerator in an airtight container. Do not make the potatoes too thick, or they will not cook. If they dry out too much during cooking, add a little hot water or vegetable broth.
