Ingredients
- 2 eggs
- 1 3/4 cups all-purpose flour
- 1/2 cup milk
- 3 1/2 tbsp sunflower oil

To prepare these delicious treats, break the eggs into a bowl, add the sugar, oil, and milk. Mix everything with a hand whisk (alternatively, you can use a mixer) until smooth and homogeneous.
Add the baking powder, unsweetened cocoa powder, and flour, previously sifted, and continue mixing to combine everything.
Take a 12-cup muffin tin, place the paper baking cups, and fill them with 3/4 of the batter. Alternatively, if you don’t have the tin, you can use aluminum cups.
Bake in a static oven at 356°F for about 20 minutes, or in a convection oven at 338°F for the same time. To ensure they’re cooked, try the toothpick test by inserting it into the center of a muffin; it should come out dry. If necessary, extend the cooking by another 2-3 minutes.
Remove the muffins from the oven and let them cool on a rack. Meanwhile, melt the dark chocolate in a bain-marie.
With the help of a corer or a knife, create a hole in the center of each muffin, saving the removed part. Fill the cavity with a little apricot jam, then close it with the piece of muffin set aside. Finally, cover the surface with the melted dark chocolate.
