- 4.23 oz scamorza cheese
- as needed arugula
- 4.23 oz ham
- as needed egg

How to make puff pastry shells
Roll out the puff pastry on a work surface, then with a 4-inch cookie cutter, cut out circles. You will get about 7 discs.
Fold each disc in half, without pressing too hard on the fold (otherwise, it will stick during baking). Brush the surface of each semi-circle with beaten egg.
With a smooth-bladed knife, make cuts without going too deep. Bake in a preheated static oven at 392°F for 10 minutes, until the surface is golden brown.
When the shells are warm, cut them with a knife as if they were sandwiches, and fill with prosciutto and scamorza cheese. In my version, I used cold cuts and cheese, but you can create many other combinations.
Storage and tips for puff pastry shells
The shells can be stored in the refrigerator, in a closed food container, until the next day. You can fill the shells with a small mozzarella instead of scamorza, or create a vegetarian version with Russian salad.
