Ingredients

  • 5.64 oz pasta
  • 2 artichokes
  • 3.53 oz mascarpone
  • 1/4 onion
  • extra virgin olive oil
  • salt
  • black pepper

Tools

  • Pan
  • Bowl
  • Pot
  • Colander

Preparation

  • Clean the artichokes by removing the outer leaves, tips, and any fuzz inside, then cut them into wedges.

If you have the stems, peel them with a knife and cut them into rings.

As you clean them, immerse the artichokes in a bowl with water and lemon juice to prevent them from darkening.

  • Clean the onion and chop it. Sauté it in a pan with a bit of extra virgin olive oil.

Add the artichokes (drained from soaking), salt them, and cook for 10-12 minutes or until they are tender. Add a little hot water so they don’t dry out and cook better.

  • Add the mascarpone (1), thinned with a bit of water, and mix it with the artichokes (2).

  • Boil the pasta in salted boiling water for the necessary minutes.

Drain it and pour it into the pan (3). Mix and let it flavor over high heat for a few seconds, adding a pinch of pepper.

  • The pasta with artichokes and mascarpone is ready, serve it hot on plates… enjoy your meal!
