Sweet or Savory Avocado Toast
Avocado toast is easy and delicious to prepare for a healthy breakfast, a quick snack or a brunch and can be filled in many different ways, both sweet and savory. The avocado can be used creamy (blended with an immersion blender) or in slices (raw or cooked).
Avocado toast is one of the most recent food trends, probably due to the surprising health benefits of avocado and, contrary to what you might think, avocado does not make you gain weight, (obviously consumed in the right quantities) on the contrary, it helps to increase the feeling of fullness between meals and consequently also to regulate body weight. Light, healthy, and quick recipe
Additionally, avocado improves digestive abilities, aiding digestion even in individuals with digestive disorders (read here and here to discover more benefits of this exotic fruit).
For this recipe, I prepared a savory toast with avocado and egg and a sweet one with honey and nuts, I did not indicate precise doses because it depends on how many you want to prepare.

Preparation of Avocado Toast
First, preheat the oven to 356°F and melt the butter in a bain-marie (or in the microwave).
Take the slices of sandwich bread and place them on a baking tray lined with parchment paper.
With a brush, spread a light layer of melted butter on each slice and bake them for about 10 minutes on each side.
Cut the avocados in half and scoop out the flesh with a teaspoon (read in the “Notes and Tips” how to cut an avocado).
Blend the avocado flesh with an immersion blender to make it creamy and divide it into two.
Divide the avocado flesh in half and add extra virgin olive oil, salt, pepper, and a few drops of lemon juice to one of the halves.
At this point, prepare the savory avocado toast: spread the sandwich bread slices with half of the avocado mixture with olive oil and top them with a fried egg or an egg muffin (see recipe here) and, if desired, a slice of tomato and parsley.
If desired, you can accompany these savory toasts with a fresh salad and arugula.
Serve them hot.For the sweet avocado toast, proceed as follows: take the toasted bread slices, spread the other half of the avocado (the one without oil and pepper) on top, and cover with pieces of nuts and honey (or maple syrup).
Serve the sweet avocado toasts hot, and if desired, accompanied by fresh fruit.
Notes and Tips
For a brunch, I also recommend these unusual “Open Sandwich Blue cheese and pear“, or these Breakfast Egg Muffins with bacon.
It’s important to know that the avocado is NOT peeled, but is cut in half and then the flesh is scooped out with a teaspoon. Read here for tips on how to safely cut an avocado without risking injury (see here).
