Apple Cake with Condensed Milk, with Royal Almond Icing
Those who follow me know well that apple cakes are my weakness, my irreplaceable comfort food. I’ve tried many, and the ones I consider top recipes are all written here in this special section of the Blog dedicated to: “My TOP Recipes“.

Ingredients for the Apple Cake with Condensed Milk
- 4-5 apples Golden Apples (approximately)
- 1.5 cups All-purpose Flour
- 200 g Condensed Milk
- 4 Egg Yolks
- 4 Egg Whites
- 0.5 cup Seed Oil (peanut, seed – I used grape seed oil)
- 1 tsp Baking Powder (about 3 grams)
- 1 pinch Salt
- 1 tbsp Vanilla Extract
- 3 tbsps Liquor (Calvados or Marsala or Cognac)
- 1 Lemon Zest (grated (optional))
- 0.5 cup Sugar (to flavor the apples, optional)
- 250 g Powdered Sugar
- 1 Egg White (about 35 g)
- 1.5 tsp Lemon Juice
- 2 g Marsala
- 2 g Whole Milk
Tools for the Apple Cake
- Bowls Guzzini set of bowls of various sizes
- Mixer Philips electric, with 450 W of power
- 20 cm diameter mold
Preparation for the Apple Cake with Condensed Milk
Wash and peel the apples and cut them into medium-sized cubes.
The original recipe doesn’t call for it, but I would let the apples soak with 0.5 cup of sugar and the zest of a grated lemon to better flavor the batter.
Whip the yolks with the condensed milk, and you’ll see they won’t rise much because condensed milk is different from sugar (I whipped for about 10 minutes anyway).
Add the flour, salt, oil, vanilla extract, baking powder, liquor, and finally the apple pieces.
Beat the egg whites until they form soft peaks (they should not be too stiff, more like shaving foam) and gently fold them into the mixture.
Pour the batter into a 20 cm (8-inch) springform pan that has been buttered and floured, and bake at 350°F for 40-45 minutes.
Let cool for 10 minutes, then remove from the pan and let cool completely on a rack.
In a non-stick pan, toast the almonds over moderate heat for a few minutes. Don’t let them burn; turn off the heat as soon as they release their fragrance.
Mix the powdered sugar with the egg white and a few drops of lemon to form a rather thick glaze, not runny.
Pour the royal icing over the apple cake with condensed milk and distribute it evenly over the surface of the cake.
Sprinkle the royal icing over the surface of the cake, then add the sliced almonds and finally more powdered sugar.
