Funfetti Muffins with Butter and Cinnamon

These “Funfetti muffins” are incredible! They’re melt-in-your-mouth muffins and are ideal for breakfast or snack, one leads to another: just baked, still warm, they’re dipped in melted butter and then in a mixture of sugar and cinnamon, offering a unique flavor and aroma!!

The recipe for making these muffins is very easy and quick, the batter is ready with a hand whisk in 5 minutes, no electric mixers or stand mixers.

Cute and super soft, these muffins are ideal for occasions like Carnival, Valentine’s Day, birthdays, and children’s parties, BUT they’re so good that I make them all year round, simple and without sprinkles.

Ingredients for Funfetti Muffins with Butter and Cinnamon

  • 3.6 cups Flour
  • 1.1 cups Sugar
  • 1 cup Whole Milk
  • 2 Whole Eggs
  • 5.3 oz Melted Butter
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • 7.1 oz Melted Butter
  • 1.1 cups Granulated Sugar
  • 2 teaspoons Ground Cinnamon
  • to taste Colored Sugar Sprinkles (for decoration (optional))

Preparation of Funfetti Muffins with Butter and Cinnamon

  • First of all, preheat the oven to 356 °F.
     

  • First, combine all the dry ingredients, sifted (flour, baking powder, salt, sugar, cinnamon), and then the liquid ingredients (melted butter (in a double boiler), eggs, milk) by making a well in the center of the dry ingredients, pour the mixed liquids into it, and briefly incorporate with a hand whisk (they say a maximum of 10, 20, 18 stirs in total), the batter should remain lumpy, this is the trick to keep them soft!
     
     

  • Spoon the batter into the prepared liners placed in a muffins/cupcakes pan.
     

  • Bake in the preheated oven at 356 °F for about 20 minutes (max 22 minutes, no more).

  • Melt the butter in a double boiler.
    In a small bowl, mix the granulated sugar and cinnamon.
     

  • Just baked, while still hot, roll the muffins in the melted butter and then in the sugar and cinnamon mixture.
     

  • Decorate the funfetti muffins with colored sprinkles, roll them again in the melted butter and then in the colored sprinkles.

  • You can also freeze these muffins (and then thaw them at room temperature).

To have a nice high dome fill the molds almost completely (NOT to 2/3).
