Ingredients
- 1 sheet puff pastry
- 3 potatoes, peeled, cooked, boiled
- 1 red bell pepper
- 2.8 oz mozzarella for pizza (grated)
- 2 eggs
- 0.42 cup milk
- 1 tablespoon grated Parmesan cheese

Steps
Preheat the oven to 356 degrees Fahrenheit.
Wash the bell pepper and cut it in half. Remove the top, discard the seeds and filaments, and cut it into pieces.
Cut the boiled potatoes into cubes.
In a bowl, break the eggs, add the grated cheese, the milk, and a pinch of salt. Beat with a whisk until smooth.
Unroll the puff pastry and place it with its parchment paper on a round baking pan.
Fold the edges of the pastry inward and use a fork to prick the surface.
Spread the boiled potatoes and bell peppers in pieces, season with salt, and sprinkle with dried parsley and grated mozzarella for pizza.
Pour the egg mixture, level by rotating the pan, and bake at 356 degrees Fahrenheit for 25/30 minutes until golden.
