- 1/4 onion
- 3 leaves basil
- 1/4 cup grated Parmesan
- 5 1/4 oz fiordilatte
- as needed extra virgin olive oil
Tools
- 1 Casserole
- 1 Slotted Spoon
- 1 Air Fryer
- 1 Baking Dish
Sorrentina Gnocchi Steps in Air Fryer
To begin, focus on preparing the sauce for the gnocchi. In a casserole, pour 2-3 tablespoons of extra virgin olive oil, add the finely chopped onion, and let it soften until golden. At this point, add the tomato sauce, a few fresh basil leaves, and season with salt. Cover with a lid and cook gently for about 30-35 minutes.
In the meantime, put a pot on the stove with plenty of salted water and bring it to a boil. When the sauce is almost ready, start cooking the gnocchi. Drop them a few at a time (about 200-250 grams per batch); as soon as they rise to the surface, scoop them out with a slotted spoon and transfer them to a large bowl. Dress them with a few ladles of sauce.
Once all the gnocchi are cooked and dressed, add a handful of grated Parmesan and mix. Cut the fiordilatte into cubes. Take the baking dish and spread a little sauce on the bottom. Pour in half of the gnocchi, leveling them well, then add about two-thirds of the fiordilatte, some Parmesan, and a bit more sauce. Cover with the remaining gnocchi, top with more sauce, a generous sprinkle of Parmesan, and the remaining fiordilatte.
Preheat the air fryer to 392°F for a couple of minutes. Once hot, insert the baking dish and cook at the same temperature for 8-10 minutes, until the surface is golden. At the end of cooking, remove the dish, let it rest for a few minutes, and serve your Sorrentina gnocchi hot and gooey.
Storage for Sorrentina Gnocchi in Air Fryer
The gnocchi can be stored in the refrigerator for a couple of days, placed in an airtight container. When you’re ready to enjoy them, just reheat them in the air fryer for a few minutes, until the mozzarella is soft and gooey again.
