Ingredients

  • 1 zucchini (large)
  • 3.5 oz cooked ham
  • as needed provola (sliced)
  • as needed extra virgin olive oil
  • as needed all-purpose flour
  • as needed breadcrumbs
  • 2 eggs
  • 1 pinch salt

Steps for Stuffed Zucchini Cutlets in Air Fryer

Start by washing the zucchinis, remove the two ends, and dry them thoroughly. Slice the zucchinis to a thickness of about 1/4 inch.

To prepare the cutlets, follow this procedure: on a zucchini slice, place one slice of cooked ham and one of provola. Then cover with another zucchini slice.

Prepare three bowls: in the first, place the flour, in the second the breadcrumbs, and in the last, beat the eggs adding a pinch of salt. Take the zucchini cutlets and first pass them in the flour, then dip them in the beaten egg, one at a time, and finally coat them well with breadcrumbs, ensuring it’s evenly distributed.

Place the cutlets in the air fryer’s basket, lined with perforated parchment paper, and drizzle with a bit of oil. Alternatively, you can spray the oil using the appropriate sprayer.

Cook at 356°F for 15-18 minutes, until the cutlets are well golden and crispy. Halfway through cooking, turn them and add another light spray of oil.

You can store the cutlets in the refrigerator, in an airtight container, for up to one day. Before serving, reheat them in the air fryer for a couple of minutes.
