Ingredients

  • 1/2 cup granulated sugar
  • 1 egg
  • 1/3 cup sunflower oil
  • 3/4 cup all-purpose flour

Steps for Chestnut Flour and Chocolate Muffins

Crack the egg into a bowl, then add the sugar, oil, and milk (or substitute with plain yogurt). Stir vigorously with a hand whisk, or use an electric mixer until smooth and homogeneous.

Add the baking powder and flour, previously sifted, and continue to mix well to combine everything. Then incorporate the chocolate chips and stir to distribute them evenly in the batter.

Take the 12-muffin pan, place the paper liners, and fill them with 2/3 of the batter. Alternatively, if you don’t have the pan, you can use aluminum liners.

Bake in a static oven at 356°F for about 20/25 minutes, or in a fan oven at 338°F for the same time.

To ensure they are done, perform the toothpick test by inserting it into the center of the muffin; it should come out dry. If necessary, extend the baking for another 2-3 minutes.

Once baked, remove the muffins and let them cool on a wire rack. Once cooled, you can enjoy them. If you like, you can sprinkle them with powdered sugar.

Storage of Chestnut Flour and Chocolate Muffins

The muffins can be stored for 3/4 days in an airtight container.

You can replace the chocolate chips in the batter with dried fruit, such as walnuts or hazelnuts.
