Pumpkin Meatballs in Air Fryer Steps

Start by cleaning the pumpkin: peel it, remove the seeds and fibers, wash it, dry it carefully, and cut it into cubes of about 0.4 inches. In a pan, add the pumpkin and half a glass of water, cover with a lid, and cook over medium heat until the pumpkin is soft: it will take about 20 minutes.

When the pumpkin is cooked, let it cool slightly and then blend it with an immersion blender. Pour the pumpkin puree into a bowl, add the egg, grated Parmesan, breadcrumbs, and a pinch of salt. Mix well to combine the ingredients.

Take some of the mixture and form meatballs, placing a cube of provolone in the center and closing them well. In a bowl, put some breadcrumbs and roll the meatballs in it to coat.

Place the meatballs in the air fryer basket, spray them with a little extra virgin olive oil, and cook at 356°F for 16-18 minutes, turning them halfway through cooking.

And there you have tasty pumpkin meatballs with melty provolone. Enjoy your meal!
