Ingredients

  • 1.75 lbs salmon
  • to taste extra virgin olive oil
  • to taste salt
  • Half lemon
  • 1 cup breadcrumbs
  • 1 bunch parsley
  • 2 sprigs rosemary
  • 1 tsp oregano

Steps for Herb-Crusted Salmon Fillet

Start by preparing the aromatic breadcrumb mixture: in a bowl, combine the breadcrumbs, finely chopped parsley, and rosemary, then add the oregano and mix thoroughly. If you prefer a stronger flavor, you can also add a clove of minced garlic.

Then proceed with preparing the fish: using a sharp knife, remove the skin from the salmon fillets, and with the help of kitchen tweezers, remove any bones. Lightly salt both sides of the fillets and place them in a baking dish lightly greased with oil.

Cover the surface of the salmon with the herb breadcrumb mixture, pressing gently to adhere well. Drizzle with a bit of lemon juice.

Bake in a preheated static oven at 350°F for 12 minutes. After this time, switch to the grill mode, raise the temperature to 390°F, and let it brown for another 4-5 minutes until the crust is golden and crispy.

Once cooked, remove the herb-crusted salmon fillet from the oven, let it cool for a few minutes, and serve.

Storage and Tips for Herb-Crusted Salmon Fillet

The salmon fillet can be stored in the refrigerator, in an airtight container, for up to 1 day. It is recommended to slightly reheat it in the oven before serving again, to maintain the crispy crust.

As an alternative to lemon juice, you can use a splash of dry white wine, which will give the dish a more delicate and fragrant note.

If you love intense flavors, enrich the breadcrumb mixture with a pinch of sweet paprika or chili powder.
