- 1/3 cup sunflower oil (or 1/2 cup butter)
- 2 1/2 cups pumpkin
- 2 3/4 cups all-purpose flour

Steps
To prepare the pumpkin cookies in the air fryer, start with the pumpkin: peel it, wash it, dry it carefully, and cut it into slices not too thick. Place the pumpkin in the air fryer basket and cook at 355°F for about 20/25 minutes, turning them a couple of times. The cooking time depends on the thickness of the slices. Once cooked, let it cool and blend it in a mixer (or with the immersion blender) until you get a smooth puree. With the indicated raw pumpkin quantities, you will obtain about 3/4 cup of cooked puree.
In a bowl, pour the sunflower oil, granulated sugar, and a pinch of salt. Mix the ingredients with a whisk. Add the pumpkin puree and continue to mix to blend well.
Add the sifted flour, baking powder, half a teaspoon of cinnamon, then knead everything with a spatula or wooden spoon.
Divide the dough into pieces of about 1 oz each, form balls and slightly flatten them between your palms to obtain disks. If the dough turns out to be sticky, help yourself with a bit of flour.
Place the cookies in the air fryer basket and cook them at 330°F for 8/10 minutes.
